
Sunday brunch at home, July 3, 2011.
Roasted vegetables, fresh tomato, pesto and one egg on a sesame bagel.
Layers from the top down:
One egg cooked almost all the way sunny side up.
Fresh basil from the garden.
Roasted strips of bell pepper, onion, zucchini and eggplant.
Sliced fresh tomato.
A thin layer of pesto.
Half of a sesame bagel.
- Once assembled bake until the egg has finished cooking. Add a pinch of sea salt.
